Why does salt have an expiration date?

1 Iodized salt loses its iodine content over time (~5 years), and according to Morton, the anti-caking agents in many commercial salts become less effective over time; still safe, but harder to get out of the container.

2 For the same reason bottled water does... packaging failure.
